Pesto Tomato Chicken with Herbed Cous Cous


After a long run in the evening, all I really want to do is eat some healthy and delicious food. Above is a photo of a meal I had a few days ago. I love Pesto and when you mix it with tomato and a bunch of mozzarella, It makes for a great combo. This recipe was something that was just thrown together and It's ridiculously easy.


Pesto Tomato Chicken with Herb'd Cous Cous 
Serves 4 people 
Ingredients:
-4 frozen strips of Chicken breast
-Bottle of Pesto
-8 Tomato Slices
-A pinch of Basil, and Rosemary
-Pinch of Salt and Pepper
-Shredded Mozzarella cheese

Instructions:
1. If you are using frozen chicken breast, thaw before hand or in a microwave.
2. Set your oven to 350 degrees farenheit at bake.
3. Foil a pan and spray with vegetable oil.
4. Place the chicken breast on the pan. Sprinkle some salt and pepper along with a pinch of basil and rosemary over the chicken.
5. Place your chicken in the oven. While your chicken is baking, cut a tomato and set 8 slices aside.
6. When your chicken is about half-done, take your chicken out and smooth enough spoonfuls on the chicken until covered.
7. Place your tomato slices on your chicken breast (I put 2 slices on each piece of chicken)
8. Sprinkle mozzarella cheese over the chicken.
9. Place your chicken back in the oven until done.

Ingredients for the Herb'd Cous Cous
-1 1/2 cup cous cous
- 1 tablespoon olive oil
- A pinch of rosemary and basil
- a pinch of salt and pepper
- 1 1/2 cup to 2 cups water (this really depends on how soft you want your cous cous to be)

Instructions:
-Bring your water to a simmer in a pot on the stove at about medium-high heat.
-Add your cous cous, olive oil, salt, and herbs to the pot.
- Turn the stove off and let the cous cous sit. Cover to keep the heat in.
- After 10 minutes, or until your cous cous has soaked up the water. Take a fork and fluff your cous cous by just mixing it around.
-You can also add more salt or spices if you would like.


This recipe was insanely easy and tasted great ! The Pesto really brings all the ingredients together like glue and all I had to do was spread it over everything. I hope you enjoy.
